Simple Garlic Shrimp over Pasta

You may not feel like a mom of the year serving Mac and Cheese at the end of the day with your yoga pants and ponytail. But in roughly the same time it takes to make a package of Mac n Cheese, you can create a “dining out” delight: Simple Garlic Shrimp over Pasta.

This means you don’t have to change out of those yoga pants, and you save a few bucks by dining at home.

How to Make Simple Garlic Shrimp over Pasta

In a large stock pot, boil whatever pasta you think goes best with seafood. (Thick spaghetti noodles work well, but you can use whatever pasta you prefer or that is on hand.)

Take a saucepan and put it on medium heat. Drop in 1 stick of butter and let it slowly clarify. Once the butter is nice and separated, put in as much fresh chopped garlic as your family can stand. (We use a whole head of garlic.) Let the garlic simmer on low heat. (You can cut the garlic ahead of time and put it in a dish of olive oil to infuse flavor.)

When it comes to the type of shrimp you’ll want to buy, frozen shrimp seems to work best for this recipe. Once your pasta is cooked to your liking, drain it and then set it in a nice serving bowl.

Add your shrimp piece by piece to the clarified butter. The butter can be on a slow simmer. Slowly cook the shrimp; once it has turned color, it is done. (It could be finished cooking in as little as 3 minutes.) You might need to flip the shrimp with a tong or fork to get both sides cooked.

Toss the butter, garlic, and shrimp in with the pasta, and serve right away!

This easy garlic shrimp over pasta has the flavor of a restaurant dish, but without the added pull on your budget. (Plus, you don’t have to dress up to go out; you can cook and eat while wearing comfy yoga pants … or whatever is your style.)


Ingredients

Scale
  • One bag of shrimp
  • Garlic, to taste
  • 1/2 stick to 2 sticks butter
  • Olive Oil for frying
  • Scallions
  • Pasta (enough for your family)
  • Chicken broth (optional, see notes)

 


Instructions

  1. In a large stock pot, boil pasta (the type of your choice).
  2. Take a saucepan and put it on medium heat. Drop in ½ to two sticks of butter and let it slowly clarify.
  3. Once the butter is nice and separated, put in freshly chopped garlic (a couple cloves to a bulb). Let the garlic simmer on low heat.
  4. Once your pasta is cooked to your liking, drain it and set in a nice serving bowl.
  5. Add the shrimp piece by piece to the clarified butter. The butter can be on a slow simmer. Slowly cook the shrimp; once it has turned color, it is done. If needed, flip the shrimp to get both sides cooked.
  6. Toss the butter, garlic, and shrimp in with the pasta, and serve right away!

Notes

The original recipe calls for 2 sticks of real butter. We stick with half to one stick and use chicken broth, which adds some great flavor and cuts the fat. A 1/2 stick of butter and a cup or so of fresh broth is delightful.
