Spiced Lime Chicken

When the weather turns warm, I love recipes that include some sort of citrus and this spiced lime chicken is just the ticket!

In a small dish combine 1/2 teaspoon each of salt, ground black pepper, thyme, coriander, garlic powder, onion powder, paprika and parsley along with 1/8 teaspoon of cayenne pepper. Mix them together. Set aside for now.

Using a fillet knife, cut two boneless, skinless chicken breasts in half into 4 cutlets.

Sprinkle half of the spice mixture over the chicken and rub it on. Turn the cutlets over and rub the other half on the other sides.

In a large skillet, heat a tablespoon each of extra virgin olive oil and butter over medium high heat. Cook the chicken for about 3 minutes on each side or until slightly golden and cooked through.

Remove the cutlets to a serving platter and drizzle with the juice of one lime.

Ingredients
