Crockpot Salsa Chicken Tacos
These Crockpot Salsa Chicken Tacos made in the crockpot are so simple to make, I’m almost embarrassed to call them a recipe. This effortless meal is the perfect thing to make on those days that you don’t even have time to gather your thoughts.
In your crockpot, place about 2 pounds of boneless, skinless chicken. You can use breasts or thighs, whatever you have handy. Sprinkle in a half teaspoon each of salt and pepper and a teaspoon each of cumin and chili powder.
Add in a cup of your favorite salsa–mild, medium, or spicy–any kind you like. Cook this on low for 7-8 hours or high for 4 hours. After it has cooked, simply pull the chicken apart with 2 forks.
Serve it on tortillas or in taco shells – topped with your favorite taco toppings.
