Recipe of the Month- Salsa Bean Soup

This recipe is one of our family favorites.  It is great timing for this one with the cooler weather approaching.  It is a great alternative to chilli.  Seriously, this is the easiest recipe to dump in the crockpot in the morning and let it cook on low all day.  Great for a day that you have a lot to cover with the kids, or a field trip and you won’t be home all day.  I am really finding that my crockpot is my best friend these days.  It is a total lifesaver!  It is almost embarrassing that this recipe only has 2 ingredients, but is packed full of flavor.  It is also a great meal on a budget!  The beans and salsa at Aldi would cost less than $5.00.  Love it!  Let me know what you think.  For all of you who eat gluten free, this is completely gluten free!

Description

This recipe can be made on the stove or slow cooked in the crockpot. I have made it both ways and it tastes the same either way.


Ingredients

Scale
  • 615oz. cans white northern beans
  • 140oz. jar of salsa (I use Pace)
  • Shredded cheese (optional)
  • sour cream (optional)
  • Avocado (optional)

Instructions

  1. Dump all ingredients into stovetop pan or crockpot
  2. Heat on warm until thoroughly heated
  3. Top with the toppings you like
